Garlic powder ½ tsp. Salt 1 tsp. Baking powder 1 red bell pepper, organic, super fine dice ½ onion, super fine dice 1 medium zucchini, thinly sliced 8 asparagus, chopped into bite size pieces 2 organic mushrooms, super fine dice 2 Tbsp. olive oil Pinch of salt ½ tsp garlic powder 6 cherry tomatoes, sliced 1 Tbsp. fresh oregano leaves, stems removed, finely chopped 1 Tbsp. fresh thyme leaves, stems removed, finely chopped 6 large leaves of basil, finely chopped Garnish with crumbled feta cheese Directions: Preheat oven to 350 degrees F. Whisk the eggs, coconut milk, garlic powder, salt, and baking powder in a medium size bowl. Set aside. Chop and prepare all the vegetables and spices. In a large frying pan over medium high heat, add 2 Tbsp. of olive oil. Once hot add the onion, bell pepper, asparagus, and mushrooms. Add a pinch of salt and garlic powder. Saute the veggies for 15 minutes stirring regularly. Pour the veggies into a 9 x 12 inch baking sheet that you prepped with olive oil to keep things from sticking. Give the egg mixture a whisk and pour the eggs over the veggies. Sprinkle the oregano, thyme and basil over the eggs and lay the tomatoes on top like you would pepperoni slices on a pizza! Bake in the 350 degree oven for 20 minutes. Be very careful when carrying the pan to the oven so you don’t spill the eggs out of the pan. Once done, garnish with crumbled feta cheese and enjoy!
