It is so dang rich and creamy, you’ll want to eat it by the spoonful! Follow along as I show you how to make pastry cream in Neapolitan style – it’s thicker than thick and has the most beautiful flavor. The secret is adding just a pinch of salt to balance everything out. I’m telling you, once you try this recipe, you’ll be hooked! Make it for all your favorite desserts like Zeppole or Sfogliatelle, you’ll be impressing all your friends. And don’t forget to hit “subscribe“, so you don’t miss any of my sweet Italian recipes! 🛒 INGREDIENTS (about pastry cream) ► 160 g flour 00 or all-purpose flour ► 400 g granulated sugar ► 10 egg yolks (about 200g) ► 1 l milk ► The whole zest or grated zest of 2 lemons ► A pinch of salt ► 1 teaspoon of vanilla extract 🗒 METHOD: Lightly beat the eggs and combine the sugar with the flour. Mix the beaten eggs with the flour mixture, then gradually add the milk, ensuring thorough mixing after each addition. Transfer the mixture to a saucepan with a thick bottom. Stir constantly over medium-low heat, incorporating the lemon zest, until it boils. Remove the lemon zest, promptly take the saucepan off the heat, and transfer the mixture to a chilled container. Add the salt and vanilla and stir. Cover the container with plastic wrap and allow it to cool completely. Before using it as a filling for your desserts, stir vigorously to cool and smoothen the pastry cream.
