Mushroom and Spinach Quiche
Ingredients:
For the crust:
250 g wheat flour
125 g butter
5 g salt
60 g egg (1 pc)
20 g water
For the pouring:
225 g cream
225 g milk
180 g eggs (3 pcs)
1/4 teaspoon ground pepper
1/2 teaspoon salt
1/4 teaspoon nutmeg
For the filing:
100 g grated cheese
170 g champignons
100 g spinach
5 g apple cider vinegar
olive oil for frying
Step by step description
1. Sift flour into a large bowl, add diced butter, salt. Rub flour and butter into fine crumbs.
2. In a separate bowl, mix the egg, water and add to the flour mixture, mix quickly until a homogeneous dough is obtained. Wrap the dough with cling film and place in the fridge for at least 30 minutes.
3. Prepare the filling. Clean the mushrooms and cut into slices. Wash spinach and pat dry with paper towel. We put the pan to heat, pour a little olive oil and fry the mushrooms, add pepper. At the end of frying, add apple cider vinegar and mix. Transfer the mushrooms to another bowl. Saute spinach in a pan for 2 minutes. Transfer to another bowl.
4. Preheat oven to 200 ° C.
5. Prepare the pouring. In a large bowl beat 3 eggs, mix and add milk and cream in 2 steps, add salt, nutmeg and black pepper. Mix everything well until you get a homogeneous mass.
6. Roll out the dough on a lightly floured board and carefully lower the dough into the mold (24 cm diameter) and gently press the dough into the bottom and sides of the sheet pan and ring mold. Trim off the excess dough off the top of the pan. Pierce the bottom of the crust with a fork.
7. Grate hard cheese. Sprinkle a piece of cheese on the dough, then mushrooms and spinach. Pour over the egg mixture and top with the remaining cheese.
8. Send to the oven for 15 minutes at 200 ° C.
9. After 15 minutes, reduce the temperature to 180 ° C and bake the quiche until golden brown for another 30-35 minutes. When ready, remove the quiche from the oven, let it cool slightly.
