Roast beef donburi 🥩🍚 This style of roast beef is quite popular in Japan! I’ve had it a couple of times and it’s so goood! This is sort of like a kitchen hack to cook roast beef by making it in the rice cooker! This is inspired by how @bayashi makes his roast beef :) 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: Sushi rice/vinegar: - 1/2 cup Rice vinegar - 1/4 cup Mirin - 4 tbsp Sugar - 1 tsp Salt - 2 cups Japanese short grain rice Roast beef: - 350g Beef Tenderloin - Salt & pepper - Garlic/Butter for basting Donburi Sauce: - Onion leeks - ¼ sheet Kombu Kelp - 5 pcs dried Shiitake mushrooms - 1 tbsp Sake - ¼ cup Mirin - Soy sauce - ¼ cup Sugar - 1 tbsp Dashi powder Cured egg yolk: - Eggs - Equal parts Sake & Mirin Toppings: - spring onion, chopped - caviar (optional) 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀: - Cook about 2 cups of Japanese rice. Mix together ingredients listed for vinegar making sure it’s well dissolved. While the rice is still hot, pour over sushi rice vinegar, mix well, cover and set aside - In a saucepan, combine leeks, Kombu kelp, Shiitake Mushrooms Sake, Mirin, Soy sauce, Sugar and Dashi powder. Simmer until slightly thickened and set aside. - To make cured egg yolk, simply add equal parts soy sauce and mirin. Marinate for at least 30 mins. - To make roast beef season your tenderloin with salt and pepper. Place in a zip lock bag and remove air using straw. Place in rice cooker with hot water on keep warm setting for 1 hr. remove and pat dry. - In a hot pan, sear your beef on all sides (30 seconds each side), turn off the heat, add butter and garlic and baste for 30 secs. - Rest for at least 5-10 mins and cut into slices of desired thickness. - Serve over sushi rice, top with spring onions, caviar and your marinated egg yolk and enjoy ❤️ #donburi #rice #steakdonburi #ricebowl #japanesefood #japanesecuisine #caviar #roastbeef #cookingasmr #asmr
