Guava French Toast Bites with an Orange Cream Cheese Glaze Recipe INGREDIENTS 10 slices of brioche bread (5 sandwiches) ¼ c guava jam 1 c coconut milk, full fat 2 eggs 1 tsp cinnamon 1 tsp vanilla extract 2 tbsp butter, more as needed blackberries, for finishing raspberries, for finishing ORANGE CREAM CHEESE GLAZE 2 tbsp cream cheese ½ tsp orange zest 1 c powdered sugar 2 ¼ tbsp Simply Orange Pulp Free INSTRUCTIONS 1. Place a small mixing bowl on top of a small saucepan with 2 cups of water, creating a double boiler, bring to a low simmer. 2. Add the cream cheese and orange zest to the mixing bowl. As the cream cheese begins to melt slowly, sift and whisk in the powdered sugar a little bit at a time until completely combined. Whisk in the Simply Orange Pulp Free juice and set aside. 3. In a shallow baking dish or large bowl whisk together coconut milk, eggs, cinnamon, and vanilla extract. 4. Build the French toast sandwiches like a PB&J. Take one slice of bread and spread a small amount of guava jam (about ½ tbsp) on top. Be sure to not spread the guava jam to the edges, keeping it more central. Place another slice on top and repeat until you have all 5 sandwiches complete. 5. Press the sandwich down a bit to lock in the guava. Using a bread knife cut out each sandwich into four or six 1 in pieces. 6. In a large skillet or sauté pan melt about 1-2 tbsp of butter on medium heat. 7. Carefully and quickly dunk each bread piece into the custard mixture coating all sides. Do not soak for too long. Allow excess custard to drip off before placing in the pan. 8. Cook French toast bites in batches, for 3 mins on each side on medium low heat. French toast bites should be crisp and golden. Repeat until all pieces are done, remove from heat. 9. Serve immediately with fresh berries and drizzle with the cream cheese orange glaze and additional orange zest.
