Italian Chefs share Pici Pasta Recipe - Food in Florence
Pici pasta from scratch with rabbit (alternative is chicken) and onions prepared by the chefs Ombretta & Filippo at Leggenda dei Frati in Florence, Italy -
Ingredients for Pici as seen in the video (6 people):
300 g of 00 flour, 200 g of durum wheat semolina, 1 egg, 50 g of extra virgin olive oil, 150 g of water
For the sauce:
250 g of rabbit meat, white wine to taste, rosemary, 2 red onions
red vinegar and red wine, half a glass, 20 g of cane sugar, extra virgin olive oil, roasted salted ricotta
Cut the pulp into strips and place it in a container with the chopped rosemary and extra virgin olive oil. After preferably two hours of marinating, heat a pan and quickly fry the meat. Pour in the white wine and let it evaporate. Add some chopped and cooked onions with vinegar, wine and sugar.
Composition of the dish
Cook the pici in plenty of salted water, sauté them in the rabbit sauce and cover with flakes of salted ricotta
