Well ripened Pink Jackfruit !🍈 Put this magical fruit into kasari & made a young coconut drink too.
➡️This is the season of jackfruit in the village. There would be some ripe jackfruits here and there randomly unless it is not time for ripe ones yet. Father has brought jackfruits just because mother reminded him about monthly alms given. There had been few ripe ones in the same tree. Ripe jackfruit pink in color with bright orange bulbs, which was smaller to the one with yellow bulbs picture us the bright and clam western sky. The ripe jackfruit was cut into two pieces and the aroma and taste made us fascinated. Father and I enjoyed this heavenly tasted fruit without any breaks. It evokes some pleasant stories to both of us.🍈🍯
➡️The juice that made out of ripe bulbs of jackfruit by pounding in the mortar mixed with kurumba water gives a different taste with a cool vibe. Crunchy pieces of Kurumba in the juice tastes as milky as the fresh ripe jackfruit. This is an ale for a fiery noon.
➡️First, I thought of preparing Halva by using pink ripe jackfruits. But the bottle of semolina on the shelf hints me to prepare the famous tamil recipe; Kesariya. The aroma which comes from cashews and plums fried in the Ghee feels the same aroma of sweets in Tamil houses in the village. I mixed it with few Goji berries and sunflower seeds. The bulbs of ripe jackfruit should be covered with water and boiled for an hour. Three or four sugar cubes should be added to this. The boiled bulbs seems to be a cluster of Atapethiya dancing in the boiling water.🌼🍂
➡️In the mean time, Hot water, Cardamom and already prepared ripe jackfruit jam mix should be added to semolina fried with Ghee and mixed well. Once the fried cashews are added to the mixture and put them in aluminum molds and flipping it to the right way finishes the process and let us enjoy it. I hold that step till following morning since everyone was full with ripe jackfruits and that was totally enough for the day.
➡️Father has brought tender jackfruit from the neighboring land. Since we got bread for the breakfast, I wanted to try out bread with a tender jackfruit curry. 😄I hurried to cut it into pieces and put it on the hearth and started cooking it. It gives an amazing taste once it is cooked in low heat with fresh coconut milk and using the homemade curry powders, fried ginger, garlic and cardamom along with brayed dried chilies. 🥘 The bubbles coming out from the curry with an oily texture arouses the hunger and mouth gets watering just like a spring. So that it could taste heavenly.
➡️It is such a pleasing combination to try out bread with boiled eggs and mother’s yummiest coconut sambol along with the tender jackfruit curry I prepared.
