Pasta of choice — cooked al dente 1 cup of the pasta cooking liquid (you might only need 1/2) 1 tablespoon butter more for the mushrooms 1 tablespoon oil 1/2 a large yellow onion — finely chopped 3 garlic cloves — minced 8 oz. (220 grams) sliced mushrooms — any type you prefer 2 sprigs of fresh thyme or 1/2 teaspoon 2 - 5 oz. cans of tuna in water — drained 1 tsp. lemon zest Juice of half a large lemon 1/4 cup heavy cream 1/2 cup grated Parmesan cheese 1/4 cup chopped parsley Salt & Pepper Melt 1 tablespoon of butter with the oil. Add the onion and cook, stirring occasionally, until it is softened and translucent. Add the garlic and cook for a couple minutes, until it is fragrant. Add the mushrooms and a little extra butter. Add the thyme and mix. Cook until the mushrooms are browned evenly. Add the tuna fish, lemon zest and lemon juice. Season with salt and pepper. Mix. Add the pasta and 1/2 cup of the reserved pasta water. Add the cream and cheese and mix. Cook for a few minutes until the sauce thickens a bit. Mix in the parsley and serve. Enjoy!
