agar-agar (power 900) - 10 g.
whites of two eggs
sugar for whipping proteins - 70 g.
vanilla extract - 1tsp
natural food coloring (optional)
grate the zest of one orange
mix orange juice with sugar and agar-agar
cook the syrup from the moment of boiling for 6 minutes
at the same time beat the proteins to solid peaks
add hot orange syrup and continue to whisk.
add vanilla extract and zest
add coloring
mix quickly and fill the piping bags
cover the baking sheet with baking paper and quickly squeeze the desserts onto the baking sheet
leave for 5 hours at room temperature
