This one takes me back to my late teen-age years and grabbing a chicken chow mien on the way home from a night out. It’s perfect for using loads of veg from the fridge and making this wonderful rich sauce, noodles and chicken. Swap out the chicken for tofu for a veggie version! This has to be one of my favourite dishes of all time.
