Onion bhaji Ingredients - 4 onions, thinly sliced - 1 green chilli, diced - small knob of ginger, grated - 1 tsp chilli powder - 1 tsp ground caraway - ½ tsp salt - ½ tsp turmeric - 5 tbsp chickpea flour (gram flour or besan) - oil for frying Method 1. Add the onions, chilli, ginger, spices, salt, and chickpea flour to a bowl. Then add around 4 tablespoons (¼ cup) water to the bowl and mix. If you think it’s too dry, add the water 1 tablespoon at a time to the bowl and mix. You don’t want a super wet batter. 2. Heat the oil to 160°C (320°F) and then roll your bhaji into golf ball sized balls and carefully drop them into the hot oil. Fry for 4-5 minutes or until golden brown and cooked through. 3. Serve with the tamarind and green chutneys.
