Chicken meat ball Biryani Ingredients Quantity Chicken kheema 500 gm Egg 1 no Salt to taste Red chilli powder 1 tsp Chopped coriander leaves ½ cup Chopped ginger 1 tsp Chopped chillies 2 to 3 no Turmeric powder ½ tsp Garam masala ½ tsp Cardamom powder 1 tsp black pepper powder ½ tsp Water as required Oil 3 tbsp Bay leaf 1 no Black pepper corn ½ tsp Chopped onion 1 cup Ginger garlic paste 1 tbsp Chopped tomato 3 no Salt to taste Coriander powder 2 tbsp Garam masala 1 tbsp Red chilli powder 2 tsp Turmeric powder ½ tsp Cardamom powder ¼ tsp Ginger julienne 1 tsp Slit green chillies 7 to 8 no Stock Water and kofta Curd ½ cup Chopped coriander 2 tbsp Chopped mint leaves ½ tbsp Brown onion 1 tbsp Saffron 1 pinch Rose water ½ tsp Kewda water ¼ tsp Lemon juice 1 tsp Ghee 1 tbsp Water as required Cumin seeds 1 tsp Whole black pepper corn 1 tsp Salt 1 ½ tbsp Soaked Rice 1 cup Left over oil 1 tsp saffron 1 tsp Handful of Mint leaves Brista for garnish Cardamom powder ½ tsp Garam masala ½ tsp Ghee 1 tsp Method In a strainer add the chicken kheema and strain it well , remove excess water from the kheema , now add the kheema in a bowl , add egg, salt , red chilli powder , chopped coriander leaves , chopped ginger , chillies , turmeric powder , garam masala ,cardamom powder , black pepper powder and mix it well make small roundles of the kheema and give it a ball size shape , In a kadhai add water and let the water get hot once the water is been hot properly add the kofta in to the water and once its cooked properly remove the kadhai and keep it aside In an another kadhai add oil , bay leaf , pepper corn , and mix it well now add ginger garlic paste , chopped tomato , salt , and mix it well properly now add coriander powder , garam masala, red chilli powder , turmeric powder , cardamom powder , ginger julienne , slit green chillies and add the kofta water and kofta together to the masala and mix it well , now add curd , chopped coriander , mint leaves , brown onion , saffron strands , rose water , kewda water , lemon juice and ghee and mix it well . In an another kadhai add hot water as required and keep the water to boil for rice once the water is boiled properly add shahi jeera , pepper corn salt and soaked rice and let it get cooked half done Till then transfer the kofta masala in to another vessel top it up with rice , now add left over oil , saffron , mint leaves , brista , cardamom powder , garam masala , ghee , again top it up with some more rice spread it properly , cover the vessel with a wet cloth and close it with the lid and keep something heavy on the lid & let the Biryani cook for 10 to 15 mins . Once its cooked properly remove it in a serving bowl and serve hot .
