15-Minute Salmon Rice Bowl

(This link goes to Amazon where I am compensated on products sold at no cost to the consumer) 15-MINUTE SALMON BOWL RECIPE Serves 2 *Print recipe here* INGREDIENTS 8 ounces salmon fillet salt and pepper to taste sprinkle of dried basil 1-2 Tablespoons non-flavored oil, with high smoke point (Avocado oil, coconut oil, vegetable or canola oil) 1 pouch of frozen, microwaveable rice 1 Tablespoon toasted sesame oil 1 cup baby spinach 1/2 cup frozen peas 1 teaspoon low-sodium soy sauce 2 green onions, sliced into small rings OPTIONAL: Kewpie mayonnaise Sriracha hot sauce METHOD: Preheat the oven to 350F. Microwave rice according to package instructions and set aside. Season salmon with salt, pepper and dried basil. Heat the oil in an oven-safe sauté pan. (no plastic handles) Once hot, place the salmon in the pan, flesh side down. Seared until opaque on the bottom, about 1/4 of an inch up the fish. Then flip the salmon and place it in the oven to continue cooking for about 5-8 minutes more if one large filet. 3-6 minutes if individual filets. In a clean, non-stick sauté pan, add the toasted sesame oil and heat until hot. Then add the cooked rice, baby spinach, and peas. Cover to wilt the spinach and cook the peas all the way through. Then add the soy sauce and the sliced green onions, and stir to combine. Portion out the rice into shallow bowls, top with the cooked salmon (either as a filet or as chunks cut with forks) drizzle with kewpie mayo and sriracha is desired.
