This one pan cheesy beef taco rice is one of the easiest & quickest meal prep recipes that only takes 30 minutes using only one pan! You can eat the taco rice on its own or use it for nachos, burritos etc. (Macros: Per Serve - 4 Total) 534 Calories | 13gF | 54gP Ingredients: 1 Diced Brown Onion 720g Extra Lean Beef Mince Taco Seasoning (Old El Paso Taco Seasoning - store bought or home made) 4 Diced Garlic Cloves 120g Tomato Paste (can be substituted for tomato puree, passata or canned tomatoes) 200g Washed Uncooked White Rice (approximately 600g cooked) 500ml Beef Stock (or just enough to cover the rice & beef) 100g Light Mozzarella Optional Toppings: Cilantro/Coriander & Light Sour Cream IMPORTANT NOTES: When adding the beef stock you may need to use less/more depending on the size of your pan, add just enough to evenly cover the rice & mince. While the mince & rice is cooking in the beef stock make sure to stir everything together every minute or so to ensure the bottom doesn’t burn.
