Orange chicken with 48g of Protein made for a Weeknight!

Meanwhile, chop up vegetables and combine sauce ingredients in a glass. Cut chicken breast into slices. Peel and grate garlic and ginger. Add oil to a pan on medium-high heat and fry the chicken for about 1 minute on each side. Remove the chicken from the pan. Add oil to the pan, reduce heat to medium, and add in pak choi and onion with a pinch of salt. Fry for 3 minutes. Add in garlic and ginger and fry for another 20 seconds. Go in with the sauce and simmer for 1 minute. Add in chicken at the end so it gets hot again. Plate the rice and add orange chicken on top.
