Cooking Mulnaengmyeon (Cold Noodles)
[Making the Seasoning Sauce]
1. Grate the apple finely.
★Make sure to grate it finely so you don’t get any chunks!
2. Mix together 3 tablespoons soy sauce, 3 tbsp plum extract, 2 heaping tbsp gochujang, 1/2 tbsp minced garlic, 1 tsp sesame oil, 1 tbsp minced onion, and 3 tbsp of the grated apple.
[Preparing the Ingredients]
1. Slice the cucumber thinly, removing the seeds.
2. Boil the egg for about 8 minutes from the point it starts boiling, then cut it in half.
3. Cook the naengmyeon noodles in boiling water for about 50 seconds, then rinse them in cold water.
[Making the Mul-naengmyeon]
1. Mix the beef bone broth and dongchimi broth in a 3:1 ratio.
★For an extra refreshing taste, slightly freeze the beef bone broth to create a slushy texture!
2. Combine 300g of the mixed broth with 2 tbsp apple cider vinegar, 1 tbsp sugar, and 1/3 tbsp soy sauce for soup to make the naengmyeon broth.
★Add mustard to taste if you prefer a richer flavor!
3. Place the cooked naengmyeon noodles in a bowl, pour the broth over them, and top with the spicy seasoning sauce, cucumber, and egg. Enjoy!
Cooking Bibimnaengmyeon (Spicy Cold Noodles)
[Preparing the Ingredients]
1. Boil 2 eggs in water with 1 tsp of salt. After boiling, rinse them in cold water and cut them in half.
★Adding salt to the water prevents the eggs from cracking!
2. Finely chop 1/2 stalk of green onion and cut the pickled radish slices into bite-sized pieces.
3. Julienne the cucumber.
[Making the Bibim-naengmyeon]
1. In a bowl, mix together 90ml (14 tbsp) soy sauce, 8 tbsp red pepper powder, 6 tbsp sugar, 2 tbsp vinegar, 2 tbsp minced garlic, 1 tbsp minced ginger, sesame seeds, and the chopped green onion to make the seasoning sauce.
★Mix until the sugar dissolves!
2. Gently loosen the noodles by hand, then cook 2 servings of naengmyeon noodles in boiling water for 50 seconds. Rinse them in cold water.
★Stir while cooking to prevent the noodles from sticking to the pot!
3. Place the noodles in a bowl, add 2 tbsp of the seasoning sauce, and mix well. Top with the pickled radish slices, julienned cucumber, and halved eggs.
4. Sprinkle with sesame seeds to finish. Enjoy!
Cooking Sutbulbulgogi (Charcoal-grilled Bulgogi)
[Making the marinade]
1. Combine 3 tbsp soy sauce, 2 tbsp corn syrup, 2 tbsp sugar, 2 tbsp cooking wine, 1 tbsp minced garlic, 1 tbsp minced ginger, a small amount of chopped onion (1/4 onion), a small amount of chopped green onion (about a finger joint’s length), and a small piece of apple or pear in a bowl.
2. Blend the ingredients until smooth.
3. Add 1/2 cup of water to the blended mixture and mix well.
4. Add the pork to the marinade and mix thoroughly.
5. Add a pinch of pepper and 1 tbsp sesame oil, then let it marinate for at least 30 minutes.
[Cooking the pork]
1. Heat a pan and add a bit of oil.
2. Cook the pork until it turns brown.
1. Transfer to a plate, and it’s ready to serve!
