Nando’s Copycat Peri Peri Chicken | African-Style Spicy Roast Chicken Recipe Served 4-5 ------ Ingredient List ------ Peri peri sauce ——— Blend all the ingredients into a sauce ——— 1 large yellow onion, cut into chunks 1 red bell pepper or capsicum, deseeded and cut into chunks 4 Thai bird’s eye chilli or African chilli, deseeded 2 stalks Chinese parsley 5 cloves garlic, peeled 1 tsp black pepper powder 1.5 tsps salt 1.5 tsps dried oregano powder 1.5 tsps paprika 2 bay leaves, remove spine Juice from 2 lemons 2 tbsps olive oil or other cooking oil Pre-marinated chicken ——— 1kg fresh chicken 1.5 tsps salt Other ingredients - optional ——— 4 potatoes, cut into chunks 1 corn, cut into chunks 1 large carrot, cut into chunks 1 garlic, cut the top off 20g unsalted butter, softened 1 tsp salt Important notes ——— Marinate the chicken with half of the peri peri sauce for at least 2 hours, but best overnight. The other half can be served as a dip. It’s important to note that if the marinade makes contact with raw chicken, it must be cooked before being served. Wrap the chicken wing tips with an aluminium foil because they burn easily. Place the chicken breast side up on the oven tray to ensure even cooking. Roast the chicken in an oven for about 40-50 minutes at 200°C (392°F). For the last 10 minutes of roasting, raise the temperature to 220°C (428°F). Ensure the chicken is thoroughly cooked before serving. When the chicken is cooked, the chicken’s juices should run clear. The duration for roasting chicken in the oven varies depending on factors such as the chicken’s size, oven temperature, and whether it’s whole or in individual parts. As a rule of thumb, add 10 minutes of roasting time for every additional 200g or 7oz of chicken weight. For instance, if roasting a chicken, cook it for 50-60 minutes at 200°C or 392°F. For a chicken, extend the roasting time to 60-70 minutes at the same. Ensure the chicken is thoroughly cooked before serving. When the chicken is cooked, the chicken’s juices should run clear. To determine if the chicken is cooked, pierce the thickest part of the thigh with a knife or skewer and check if the juices that come out are clear (not pink).
