Honey is the world’s oldest sweetener, and honey cookies appeared as soon as man started baking bread. Honey biscuits first appeared in monasteries, in aristocratic castles and among the inhabitants of royal cities. It was made in private houses and artisan workshops. In the Middle Ages, the upper classes gave honey cookies as gifts during the holidays (such as Christmas, Easter and New Years) and for special events (weddings and christenings). During the 1850s icing decoration appeared for the first time in Germany, and then quickly spread to most European countries. Gingerbread was a traditional confectionery sold at popular fairs.
