The Viral Junk Food Pizza Slice 🍕

Spicy Junk Food Chorizo Pizza!!!! Makes 2 Pizza’s (on the smaller end) Difficulty - Easy Taste 9/10 Visuals NA “It’s a pizza, chill Daddy!“ Notes: This one is for the team and your baby mama! Pizza Dough (quick rise): - 333g 00 flour - 213g water - 16g fresh yeast - 8 sea salt - 23g sugar - 30g olive oil Process: Mix everything and work it until a smooth dough forms and you have made enough gluten structure (note: might be a touch sticky). Allow to rise until it doubles in size. Divide in half, shape into a ball and allow to proof again until double in size. Shape into the desired shape (note: square is not recommended and neither is a triangle). Follow next steps below 👇 Sweet & Spicy Tomato Sauce: - 1 small chilli chopped - 250g cherry tomotoes - generous splash of olive oil - 80g red port - Touch of salt to season - Touch of sugar to season (if too acidic) Process: Place a skillet on high heat till slightly smoking, add olive oil, then tomatoes and chilli. Fry until slightly soft and mushy and add port allow to reduce to half. Add 200g water and reduce again to half. Crush tomatoes and in the meantime with the back of a spoon. Place over a fine sieve and press through the pulp. Discard skin and seeds. Place back into a small pot and reduce until really thick. Season with salt, and sugar, and add another splash of olive oil and stir through. Set aside until the pizza proofing/shaping is ready. Finishing touches: - Sweet & Spicy Tomato Sauce - 200g shredded mozzarella - 10 slices of chorizo - Chilli flakes (optional) - Truffle pieces (optional) - Grated Pecorino to finish (20g approx.) Process: Preheat oven to max temperature. Tomato sauce goes first followed by all other ingredients. Remember half goes on each pizza.
