Lightly coat an 11x7” (28x18 cms) casserole dish with some spray oil. Add the heavy cream to a pot — preferably with a heavy bottom. Add the thyme and garlic and bring to a boil. Reduce the heat and simmer on low for about 5 minutes. Remove the cream from the heat, cover the pot and steep for about 15 minutes. While the cream is steeping, thinly slice the potatoes using a mandolin or a sharp knife. Season the sliced potatoes with salt — mixing them well to coat all of them. Mix the cheeses together. Place 1/2 of the sliced potatoes into the casserole dish. Strain half of the cream over the potatoes. Season with pepper and top with half of the cheese. Repeat with the other half of the ingredients. Cover the casserole dish with aluminum foil and place in the oven for 40 minutes. Uncover and cook for an extra 20 to 30 minutes — or until the middle is completely cooked through and the cheese is nice and golden. Remove from oven and allow to sit for 10 minutes before serving. *You can also use Russet potatoes is you prefer. Peel them and slice them. You will probably only need 4 or 5.
