Ground cumin 2 tsp. Maple syrup 1 Tbsp. tahini ⅛ tsp. Cayenne pepper 1 Tbsp. fresh lemon juice ½ tsp. Fresh rosemary, chopped fine 1 Tbsp. quality olive oil ½ tsp. Salt or more to taste 4 - 5 cloves of roasted garlic, or 1 to 2 raw garlic cloves, minced Garnish: Smoked paprika Roasted pumpkin seeds 1 Tbsp. quality olive oil Directions: Preheat the oven to 400 degrees F. Take 1 bulb of fresh garlic and cut off ¼ to ½ inch of the top of the bulb to expose the cloves. Place the cut bulb on a piece of foil and pour a good tablespoon of olive oil over the top of the exposed cloves. Wrap the garlic up in the foil and place in the oven for a good 45 - 60 minutes or until soft and a beautiful golden brown. Once the garlic is done, remove 4 or 5 cloves with a knife. They should pop right out. Place them in a food processor along with the garbanzo beans, pumpkin, 1 Tbsp of olive oil, tahini, maple syrup, cumin, cayenne pepper, and salt. Blend the hummus. Add the lemon juice and chopped rosemary and blend until completely smooth. Now is the time to do a taste test and adjust the flavors as needed. Pour the hummus into a serving dish and top with a sprinkle of smoked paprika, pumpkin seeds and a drizzle of olive oil.
